I LOVE this loaf, I make it mosts weeks and have it as a simple breakfast broken up into yoghurt, or a pre/post workout snack... or even just a little treat. It's super satisfying and packed with lots of healthy stuff. You might need to trial your chosen protein powder as some may have more sweetness or density than others. Happy baking! xx
Blackberry & Banana Protein Loaf
Makes 10 slices
3/4 cup almond milk
1/4 cup coconut yogurt
2 mashed ripe bananas
2 tbsp lemon juice
1 cup buckwheat flour
1/3 cup tapioca flour
1/3 cup blanched almond meal
1/3 cup Vanilla Protein Powder (I use plant force vegan protein)
1 1/2 tsp baking powder
1/2 tsp baking soda
1/3 cup coconut sugar
1 cup frozen or fresh blackberries, chopped
Preheat oven to 180*C. Combine the wet ingredients in a bowl. Whisk well and set aside.
In a separate bowl, combine all the dry ingredients (everything aside from the berries) and mix together. Pour the wet mixture in and stir until just combined. Gently fold the berries through the batter until evenly distributed.
Pour into a lined loaf tin and bake in the oven for 50-60 minutes, or until golden brown and centre is cooked through. Remove and allow to cool before slicing. Enjoy!
