This is the salad I take everywhere. It's the salad I turn to for pot luck dinners or when friends are coming over for dinner and I have no time to prepare, It's also the salad I take to picnics, family functions - hell it's just a damn good salad!
Green Salad with Lemon Tahini Dressing and Mixed Seeds
2 bunches broccolini, sliced thinly
3 cups leafy greens (rocket, baby spinach, silverbeet)
2 tbs sesame seeds
2 tbs sunflower seeds
2 tbs pepitas
2 tbs tahini
1 tbs lemon juice
1 tbs water
2 tsp olive oil
pinch salt and pepper
Blanch the broccolini in boiling water for 3-4 minutes. Drain and refresh under cool water.
Meanwhile, combine the dressing ingredients in a small bowl. Season to taste with salt and pepper. Note: tahini can split, simply persist by stirring until it comes together again. Loosen it up with a little extra olive oil and lemon juice until you reach a runny consistency. Plate up the greens and top with the dressing, and seeds. Dig in!
